I don’t know about you guys, but my kiddos are the epitome of picky eaters…when I’m going through a clean eating stage, I can literally hear my son in my head as I pick up chicken for dinner saying…”Chickennnn? Again!?????” LOL. But one thing they NEVER turn their noses up at is breakfast. A hearty breakfast is the name of the game in my household, hubby included, so why not enjoy a new take on it, on occasion, as well. I mean, is there ever a time that breakfast isn’t good?? Today I wanted to share with you a Boudin Bakery, San Francisco inspired, Sausage Waffle Taco dinner using delicious Smithfield Sausage, a hearty Belgian Waffle, with fresh eggs and, of course, syrup!
I stumbled across this deliciousness last week when we were traveling in San Francisco and since then I couldn’t wait to recreate it for my blog. It’s such a simple concept, but it’s a fun way to think outside the box and create an anytime meal idea out of a traditionally breakfast concept!!
The idea is simple, you create your own fresh made waffles, top them with eggs, Smithfield sausage, and syrup and add any other toppings that tickle your fancy! I’m kind of a traditionalist, so I just added eggs, sausage, and cheese, then a light drizzling of syrup to top it off!!

To make this recipe, follow the instructions below and be sure you have a waffle maker available to you.
Sausage Waffle Tacos
Belgian Waffle Option One:
Use a box mix Belgian waffle mix and follow instructions on box
Belgian Waffle Option Two:
Create a sourdough waffle using this recipe:
FOR THE OVERNIGHT SPONGE, OR BASE:
- 1 cup sourdough starter“unfed”
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 tablespoon light brown sugar
FOR THE BATTER:
- 1 large egg
- ¼ cup melted unsalted butter or neutral oil
- ½ teaspoon vanilla extract
- ½ teaspoon kosher salt
- 1 teaspoon baking soda
Put the sourdough starter in a large bowl and add the buttermilk, flour and sugar, then stir to combine. Cover the bowl and allow it to rest overnight at room temperature. When you are ready to make your waffles, whisk the egg, melted butter or oil and the vanilla extract together in a small bowl, then add the rested sponge. Add the salt and the baking soda to the batter and mix to combine. Pour some of the batter onto a preheated greased waffle iron and cook until the waffle is brown and crisp, then repeat.
For Taco Waffle Toppings:
4-6 eggs, scrambled
1 Package Smithfield Fresh Bacon Sausage Links
Syrup
Toothpicks to hold waffle together, optional
